Ah the age old question, What to pack in your child’s daycare lunchbox?

Toddlers are notoriously fussy so we are always on the hunt for recipes with hidden fruit and veggies. These are great for adults too so it’s a win win.

Get the kids involved in measuring ingredients and bringing it all together.

This recipe is super easy and can really be adapted for whatever you have in the pantry. Depending on the age of your child, I like to add in extra seeds and nuts if I have them.

▢ 1 cup quick oats ▢ 1 cup flour any kind ▢ 1 teaspoon baking powder ▢ 1 teaspoon cinnamon ▢ 1 grated carrot ▢ 1/2 grated apple ▢ 1/2 cup raisins ▢ 1/2 cup sunflower seeds, pumpkin seeds or linseeds or a mixture of whatever seeds you have. ▢ 1/2 cup coconut oil (or unsalted butter, melted and slightly cooled) ▢ 1/4 cup honey (or maple syrup)

Preheat the oven to 180° and line a baking sheet with baking paper.

Mix together all ingredients in a large bowl using a wooden spoon. This is a great step to get the little ones involved.

Roll into balls and place onto the prepared baking sheet and press down with a fork.

Bake for 18-20 minutes or until just golden around the edges.

Let cool on the baking sheet and serve.

These are best eaten on the day they are made, but can be stored in an airtight container at room temperature or in the fridge for 3-5 days.
